The third play you're describing is a pretty garden variety naked bootleg. It's featured in one variant or another in pretty much every college playbook, and there's nothing uniquely wrong with the play design. It's intended to draw defenders to the short side and create a run/pass option for the QB on the edge, either getting the ball to the receiver with room to run or taking the easy yards with his legs.
Alessio should have run immediately on seeing that there was no LB there to contain the edge. Instead, he held the ball and took a sack.
